Pork and Asparagus Stir-fry

Ama-koji and soy sauce mixed together impart a miso-like flavor. It tastes great with pork.
This recipe also uses shio-koji to enhance the taste.

Ingredients (2 servings)

150 gm boneless lean pork
15 gm shio-koji
4-6 stalks asparagus               
1 ½ tablespoons ama-koji
1 teaspoon soy sauce
2 tablespoons vegetable oil

  1. Cut the pork into ¼ inch strips. Rub the shio-koji into the meat and let it stand for 10 minutes.
  2. Cut the asparagus into 1½ inch lengths.
  3. Mix the ama-koji and soy sauce together.
  4. Heat the vegetable oil in a wok or heavy skillet. Add the pork and
    stir-fry until it is no longer pink. Then add the asparagus and once it is tender, add the mixture from #3 and stir fry until well coated.
