Sesame Tofu Dressingvegan

A creamy, rich sesame dressing for use on any type of salad- especially good with steamed chicken or pork.

Ingredients (makes about 1 cup)

¼ block tofu
4 generous tablespoons shio-koji
2 generous tablespoons ama-koji (or 3 tablespoons honey)
6½ tablespoons (60 gm) sesame seeds
4 tablespoons rice vinegar (or lemon juice)

              

  1. Drain the tofu.
    Slice the tofu into six or seven pieces and place on a cutting board between two dishtowels or layer of paper towels. Place a weight on top for about 15 minutes to get rid of excess water.

  2. Put all the ingredients in a blender and mix until creamy.
