Balsamic Vinaigrette vegan

Delicious vinaigrette for fresh salad greens. If you like, add feta cheese or blue cheese to the salad. Top salad with chopped roasted nuts for added flavor.

Ingredients (makes about 1 cup)

1/4 cup balsamic vinegar
2 teaspoons brown sugar (optional, depends on sweetness of balsamic vinegar)
1 tablespoon chopped garlic
1 1/2 teaspoons shio-koji
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil


  1. Put the ingredients in a small bowl and whisk vigorously. Alternatively, put all ingredients in a glass jar, tighten the lid and shake well.
