Sesame Seed Soymilk Pudding
A simple cold pudding made with agar. It has a mild sweetness with a rich sesame flavor.
Ingredients (6 servings)
300 cc soymilk
3 tablespoons black sesame seeds
½ teaspoon shio-koji
2 teaspoons powdered agar (kanten)
200 cc warm water
Topping
6½ tablespoons (80 gm) brown sugar
½ teaspoon shio-koji
40 cc water
- Grind the sesame seeds and set aside. Put the warm water into a small saucepan and sprinkle the powdered agar in the water and let it sit.
- Warm the soymilk in a saucepan. Keep the temperature below 70°C (155°F).
- Heat the pan with the agar over a low heat until it dissolves.
- Once the agar dissolves, remove from the heat. Add the following ingredients in order: sesame seeds, shio-koji, and soymilk. Mix well. Pour the mixture into six pudding cups or tea cups.
- Cool and place in the refrigerator to set.
- Prepare the topping. Put all the topping ingredients in a small saucepan and heat over low heat. Once the sugar dissolves, cool to room temperature and place in the refrigerator to cool.
- After the pudding sets, pour the sweet topping on each pudding and serve cold.
